Golden Rice & Coconut Pudding

  • 1/2 cup jasmine rice

  • 1 cup coconut milk

  • 1 1/2 cup water

  • 1 teaspoon coconut oil

  • 1 teaspoon turmeric

  • 2 star anise

  • 2 teaspoons fresh ginger

  • 5 cardamon pods sliced in half 

  • 2 - 3 tablespoons maple syrup 

  • pinch of sea salt

In a saucepan add the turmeric, star anise and cardamom pods with 1 teaspoon of coconut oil and stir for a few minutes. Add in the rice and continue to stir for another few minutes until lightly toasted. Add 1 cup of water and allow the rice to boil. Reduce to medium and cook until all the water is absorbed, stirring frequently. Add in the coconut milk and the remaining 1/2 cup of water. Continue to stir until the liquid is absorbed and the pudding is creamy, around 10 - 15 minutes. Remove from heat and add in the fresh ginger, pinch of salt and maple syrup. 

Serve warm or chilled with pistachios or any nuts you have.
