Salsa Verde (Green Tomatillo Salsa)

  • 2 pounds tomatillos

  • 1 jalapeno chilis (or to taste)

  • 1 lime

  • 5 cloves of garlic 

  • 1 white onion

  • 1 cup chopped cilantro

  • salt to taste

Take the husk off the tomatillos, slice in half and place on baking sheet. Similarly slice 1 or 2 jalapeno chilies, garlic and onion  and add to the same baking sheet. Roast in oven at 450F for 10 minutes or until the tomatillos are charred. Add the roasted vegetables to a blender along with the juice of one lime, salt and cilantro and blend until thin salsa constancy. Tastes great on tacos or rice and beans!
