Sprouted Maple Buckwheat Granola

  • 2 cup sprouted buckwheat groats

  • 1/2 cup raw almonds

  • 1/2 cup unsweetened coconut shavings

  • 1/4 cup sunflower seeds

  • 1/4 cup maple syrup

  • 1/4 cup coconut oil 

  • 1 teaspoon sea salt

  • 1 teaspoon cinnamon

Sprout buckwheat groats for a few days or use ones already sprouted ones. If you cant find them, not sprouted buckwheat groats will work just as well too! Preheat the oven to 360 F and line a sheet tray with baking paper. Melt coconut oil and add to large mixing bowl. Pour in maple syrup sea salt and cinnamon and whisk well. Add in the buckwheat groats, sunflower seeds and almonds and mix again. Place the granola on a lined sheet pan and bake for 15 minutes, stirring every 5 minutes or so. When nice and brown, take out of oven and add the remaining dried coconut.

Served here with coconut yogurt, a drizzle of honey and fresh berries.
