Maple Trail Mix Granola

  • 3 cup gf rolled oats

  • 1/4 cup pecans 

  • 1/4 cup dried banana 

  • 1/4 cup sunflower seeds

  • 1.4 cup blanched almonds

  • 1/3 cup dried cherries

  • 1/4 cup maple syrup

  • 1/3 cup coconut oil 

  • 1 teaspoon sea salt

  • 1 tablespoon cinnamon

Preheat the oven to 360 F and line a sheet tray with baking paper. In a large bowl add all the dry ingredients together. Then in a small saucepan melt the coconut oil and maple syrup together over low heat. Pour the syrup onto the dry ingredients and mix till well combined.  Place the mix on the lined sheet pan and bake for 15 minutes, stirring every 5 minutes or so. When nice and brown, served here with coconut yogurt, a drizzle of honey and fresh berries.
