Coconut Maple + Maca Granola
3 cups unsweetened coconut flakes
1 1/2 cups sprouted almonds - broken in half
1/4 cup sesame seeds
3/4 cup sprouted sunflower seeds
3/4 cup sprouted pumpkin seeds
2 tablespoons chia seeds and/or flax seeds
3/4 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1 tbsp maca powder
Sprinkle of ground cardamom
1/4 - 1/2 cup maple syrup ( depending on how sweet you like it)
1/4 cup coconut oil
1 teaspoon vanilla powder
1/2 cup dried fruit of choice - I used raisins this time
Preheat oven to 300F. Mix all the dry ingredients together in a large bowl. Melt coconut oil and mix in maple syrup. Add wet mixture into dry and mix well. Line a baking sheet with parchment paper. Add mixture to baking sheet in a even layer and bake for 20 minutes until lightly brown. Allow to cool, mix in dried fruit and enjoy!
