Everything Breakfast Cookies
1 cup gf old fashioned oats
1/4 cup raisins or chopped dried fruit
1/2 cup almond flour
2 tablespoons chia seeds
1/4 cup pumpkin seeds
1/4 cup shredded coconut
1/4 cup chipped walnuts
1/2 teaspoon baking powder and baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon vanilla powder
1/3 cup coconut nectar or maple syrup
1/3 cup almond butter
1/4 cup coconut oil
2 flax eggs ( 2 T ground flax, 4 T water)
Make the two flax eggs and let them rest while you melt coconut oil in a pan along with almond butter, coconut nectar. In a bowl mix all the dry ingredients together well. Pour the coconut oil mixture into the dry ingredients followed by the flax egg and mix until well combined. Scoop the cookie dough into muffin tins (half full) or donut pans if you have them. Enjoy for up to a week in the fridge!
