Dough 

  • 1 1/2 cup gf oats 

  • 1 cup almonds (roasted)  

  • 1/4 cup coconut sugar 

  • 1/4 cup coconut oil 

  • Pinch salt

  • 1 teaspoon cinnamon 

Fig filling 

  • 8 ounces dried figs

  • 3 - 4 dates to sweeten if necessary 

  • Pinch of salt

  • 1 teaspoon vanilla powder 

Preheat oven to 350F. Grind oats and almonds into a flour in a food processor. Add coconut sugar, coconut oil, salt and cinnamon and blend until well combined. Roll out dough onto parchment paper a 1/4 inch thick. Cut into two rough squares about the same size and set aside. 

To make the fig filling, soak figs in warm water for 5 minutes. Drain and place figs into a food processor, along with a few dates, a pinch of salt and vanilla.  Blend until the figs resembles thick paste - adding a bit of the fig water if needed. Spread the fig paste onto one half of the dough square and then cover with the other half of dough. Press down lightly to form a seal. Bake for 15 minutes or until nice and brown! Enjoy hot with coconut cream or as a snack when cold.
